A takikomi gohan made by simply placing a whole chicken breast, Japanese leek, and ginger in the rice cooker and cooking it all together. The rice is seasoned with nothing but soy sauce, yet the umami and fat rendered from the chicken, the sweetness of the leek, and the aroma of the ginger come together for a surprisingly delicious result. It's a Japanese-style khao man gai, eaten by topping the moist chicken breast with a tangy scallion sauce.

  4. Trim off the root end of the white leek and use only half. Lift the blade of the knife slightly and make accordion-like slits, then cut it in half and chop from one end to mince it.   6. Rinse 2 go (300g) of rice. Add water, stir briefly, and immediately discard the rinsing water — repeat this twice.
